Well, just to give my two bits, maybe we should get a nice hand drawn one scanned on, then have some one open it up in photoshop and give it some color. I could draw ya up one if my scanner didn't hate the fleshys...

first off, should it be a he or a she (or gender neutral? o.0), should it be saying something like, wark, kewh, welcome, or some thing else, is it a red, black, yellow, blue, what color (just like to know :P) should he/she/it have a rider? anyone wana color it, since I suck with photoshop? and there is a cow level.

You can design it as you want.
I personally prefer it to be classically yellow, saying "kweh", and with a moogle sitting on it's back, with a fishing rod with a Gyshal Green on it, and in front of the chocobo's face, so it keeps walking forward =P
